Directions

  1. 1Shave palm sugar using a sharp knife. A fine shaving is needed for the sugar to dissolve in the salad dressing and marinade.
  2. 2Prepare the marinade by mixing palm sugar, fish sauce, and finely ground black pepper in a bowl.
  3. 3Pound the steaks to make them about 2cm or half an inch thick. This thickness is perfect for cooking.
  4. 4Marinate the steak pieces in the prepared marinade for a few minutes.
  5. 5Toast raw sticky rice in a hot pan until it turns a nice golden color.
  6. 6Grind the toasted rice into a powder using a mortar and pestle.
  7. 7Add oil to a hot pan and grill the marinated steaks until they are evenly cooked, flipping them to get a nice dark color on both sides. You can check for doneness by poking the steak with your finger.
  8. 8Let the cooked steaks rest while you prepare the salad dressing.
  9. 9Prepare the salad dressing by combining the remaining shaved palm sugar, fish sauce, chili powder, and lime juice in a bowl.
  10. 10Finely slice the red Asian shallots.
  11. 11Mix the warm beef and shallots with the salad dressing.
  12. 12Slice the rested steak into thin slices.
  13. 13Add the sliced steak to a bowl with the sliced shallots. Add some salad dressing.
  14. 14Add mint leaves to the steak mixture.
  15. 15Finely chop sawtooth coriander and add it to the salad.
  16. 16Add spring onion to the salad.
  17. 17Add more salad dressing and mix well.
  18. 18Add more chili powder to the salad.
  19. 19Serve with cabbage and snake beans.
