Directions

  1. 1Combine the thawed edamame, white beans, and fava beans in a large bowl.
  2. 2Whisk together the red wine vinegar, apple cider vinegar, fish sauce, white sugar, light mayo, Dijon mustard, grated garlic, and harissa in a separate bowl to make the dressing.
  3. 3Pour the dressing over the bean mixture.
  4. 4Add the minced dill to the bowl.
  5. 5Thinly slice the red cabbage and add to the bowl.
  6. 6Chop the bell peppers into bite-sized pieces and add to the salad.
  7. 7Toss everything together to combine.

Ingredients

  • 1 bag edamame
  • 1 can white bean
  • 1 can fava bean
  • 1 bunch dill
  • 1/2 head red cabbage
  • 2-3 bell pepper
  • 1/2 cup red wine vinegar
  • 1/4 cup apple cider vinegar
  • 1/4 cup fish sauce
  • 6 tbsp white sugar
  • 6 tbsp light mayo
  • 1 tbsp dijon mustard
  • 1 clove garlic, grated
  • 1-2 tbsp harissa

Tips

  • Use oil instead of light mayo if preferred.
  • Adjust the amount of harissa to your spice preference, or leave it out if you do not like spice.
