Slata Mechouia

Directions

  1. 1Place peppers, tomatoes, onions, and garlic on a baking tray.
  2. 2Broil the vegetables in the oven.
  3. 3After broiling, place the vegetables in a plastic bag and tie it to steam them, making them easier to peel.
  4. 4Peel the skin from the broiled peppers and remove the seeds.
  5. 5Dice the broiled peppers.
  6. 6Dice the broiled onions.
  7. 7Peel the skin from the broiled tomatoes and dice them.
  8. 8Roughly slice and chop all the broiled vegetables (peppers, tomatoes, onions, and garlic) together on a cutting board.
  9. 9Transfer the chopped vegetable mixture to a serving bowl.
  10. 10Add coriander, caraway, and salt to the salad.
  11. 11Drench the salad with a generous amount of extra virgin olive oil.
  12. 12Mix the salad thoroughly to combine the spices and olive oil.
  13. 13Garnish the Slata Mechouia with tuna and olives.

  • Although vegetables are typically grilled over charcoal in a 'kanoun' (an ancestral clay BBQ) for a distinct 'mechouia' flavor, an easier broiler version using an oven is sufficient.
  • Simpler takes of 'mechouia' can include just peppers, or sometimes even eggplant.
  • The most classic and popular version includes tomatoes, peppers, onions, and garlic.
