Boil the cut potatoes until they are fork-tender, which takes about 7-10 minutes.
Drain the boiled potatoes and shake them in the pot to rough up their edges.
Let the potatoes sit for a couple of minutes to remove moisture.
Prepare the sauce by combining 4 tablespoons of Greek yogurt, 1 big tablespoon of sesame paste/tahini, a tiny piece of garlic, lemon juice, and salt in a bowl.
Mix the sauce ingredients well and adjust seasoning to taste.
Add a generous amount of neutral oil to a baking tray and heat it in the oven for a couple of minutes before adding the potatoes.
Place the boiled and shaken potatoes onto the heated baking tray.
Bake the potatoes at 180°C until crispy on the outside, approximately 45 minutes, stirring every 15 minutes.
Bring a frying pan to medium heat, then add olive oil, butter, and minced garlic.
Fry the garlic for 2 minutes.
Add 2 tablespoons of harissa paste and 1 tablespoon of honey to the pan.
Mix everything in the pan until well combined.
Add the baked crispy potatoes to the pan with the harissa and honey sauce.
Toss the potatoes to coat them evenly with the sauce.
Place the coated potatoes on the bed of tahini yogurt on the plate.
Garnish with chives on top.
Squeeze fresh lemon juice over the finished dish.
