1In a large mixing bowl, mix together warm water, honey, extra virgin olive oil, and instant yeast. Whisk until combined.
2Add white bread flour and fine sea salt. Mix until well combined.
3Cover the bowl and let it rest for 15 minutes. Then, do some stretch and folds.
4Cover and let rest for another 15 minutes, repeat stretch and folds again.
5Cover and let it rest at room temperature for 1 hour and a half.
6While the dough is resting, make garlic butter by melting butter and olive oil in a frying pan, add minced garlic and chopped parsley and simmer on medium low for 2 minutes. Set aside to cool.
7Grate mozzarella cheese if you're not using pre-grated kind.
8Once the dough is finished resting, tip it into an oiled tray. Add about two thirds of the garlic butter and half of the cheese.
9Fold the dough up into a burrito-like shape and flip it over.
10Let it rest for another hour and a half.
11Drizzle with olive oil and dimple the dough.
12Bake for 15 minutes. Then add the rest of the cheese and bake for another 10 minutes.
13Top with the rest of the garlic butter and freshly grated Parmesan.
