1Knead flour, salt, and water into a firm dough, form into a ball, and let rest in cold water for 1 hour.
2Knead the dough in cold water, changing the water several times until it is only slightly cloudy (approx. 10–15 min.). What remains is elastic gluten. Let rest briefly if necessary.
3Press the seitan flat, spread with the seasoning paste, divide into three strands, braid, and knot into a compact roast shape. Invert the end over the roast to form a skin.
4Bring the ingredients for the marinade to a boil, then simmer gently for 10–15 minutes.
5Place the seitan in the hot (not boiling) marinade and let it steep at 85–95 °C for 60–75 minutes. Let it cool in the marinade and then let it marinate covered in the refrigerator for 12–24 hours.
6Pat the seitan dry and brown it vigorously in oil all around (8–12 minutes).
7Strain the marinade. Caramelize sugar, briefly roast tomato paste, deglaze with the marinade, and reduce to about one-third (30–45 min.). Season with miso, cranberries, salt, pepper, and possibly vinegar.
8Place the seitan with some sauce in a dish and glaze in the oven at 200 °C for approx. 15 minutes.
