1Place 1/2 cup parsley, 1/4 cup diced onion, 3 garlic cloves, 1/4 cup olive oil, 2 tbsp red wine vinegar, 1/2 tsp coarse salt, 1/2 tsp pepper, 1/2 tsp oregano, and 1/2 tsp red pepper flakes into a food processor.
2Blend the ingredients until well combined, forming the chimichurri sauce.
3Heat 1 tsp olive oil in a pan over medium-high heat.
4Add 1-inch pieces of seasoned NY strip steak to the hot pan. Cook for 2-3 minutes on each side until browned.
5Turn off the heat and stir in 3 tbsp of the prepared chimichurri sauce for 1 minute. Remove the steak bites from the pan.
6Peel and dice 2 large russet potatoes.
7Boil the diced potatoes in salted water until fork-tender.
8Drain the potatoes and return them to the pot. Add 1/4 cup milk and mash.
9Stir in salt, pepper, 1/2 tbsp butter, and 1/2 tbsp chives into the mashed potatoes.
10Sauté 2 chopped garlic cloves in 1 tsp olive oil for about 30 seconds.
11Stir 8 oz broccolini into the garlic-infused oil.
12Add the juice from half a lemon to the broccolini and cook for 3-4 minutes until bright green.
13Serve the steak bites over the mashed potatoes and top with additional chimichurri sauce.
14Garnish the dish with chives and serve with the broccolini.
