1Fry the pita bread in oil until it puffs up like a balloon.
2In a pot, add two cans of chick peas, one cup of water, two crushed garlic cloves, chopped jalapeño (optional), salt, and pepper.
3Mix and simmer on low heat for 15 minutes until the chickpeas are tender.
4Add olive oil and mix.
5In a bowl, add one cup of yogurt or Laban, three tablespoons of tahini, one to two freshly squeezed lemons, three crushed garlic cloves, 1/4 teaspoon of salt, and two to three tablespoons of water.
6Mix well.
7Layer the pita bread with chickpeas, then the yogurt mixture, and repeat layers.
