Serves 1

Directions

  1. 1Put all cherry tomatoes in a bowl and thoroughly rinse them a few times until the water is clear.
  2. 2Chop all your tomatoes into halves.
  3. 3Chop your onion in half and prepare your garlic.
  4. 4Start to heat up your pan on low heat.
  5. 5Once the pan is hot, add a generous amount of olive oil to coat the pan.
  6. 6Add in your three cloves of garlic.
  7. 7Add in both onion halves, flat side down, to add flavor to the olive oil.
  8. 8Leave the garlic in for a minute or two until it starts to look slightly browned.
  9. 9Take out the garlic temporarily and put it to the side.
  10. 10Once the bottom of your onions start to look browned, you can throw in your tomatoes.
  11. 11Give the pan a little shake to make sure all the tomatoes get coated in olive oil.
  12. 12Turn the heat up from low to medium.
  13. 13Add in your salt.
  14. 14Add in your pepper.
  15. 15Give the tomatoes a good mix, but make sure the onions stay flat side down at the bottom of the pan.
  16. 16Cover the pan and let the sauce reduce.
  17. 17When the sauce has reduced and looks slightly like this, add your garlic back in to get some more flavor.
  18. 18Add in the chopped Calabrian chili, including about two spoons of the oil and one spoon of the actual peppers (adjust to your spice preference).
  19. 19Take out your onions.
  20. 20Let your sauce continue to cook and take out your garlic.
  21. 21Transfer everything into a blender.
  22. 22Add some basil.
  23. 23Blend until it's silky smooth.
  24. 24Strain your sauce and put it back into the pan.
  25. 25Bring some water to a rolling boil in a pot.
  26. 26Add in your pasta of choice.
  27. 27Save some pasta water for later.
  28. 28Keep tasting the pasta to see when it's al dente and ready to take out.
  29. 29Strain the pasta.
  30. 30Add your pasta to the sauce in the pan.
  31. 31Add in a little bit of butter.
  32. 32Mix everything together.
  33. 33Add in a splash of pasta water.
  34. 34Keep mixing until the sauce is completely sticking to the pasta and the butter has melted.
  35. 35Serve the pasta in a bowl.
  36. 36Top it off with a little basil.
  37. 37Add a little Parmesan cheese on top.
  38. 38Enjoy your perfect plate of pasta.
