Directions

  1. 1Grind the instant oats in a food processor until it becomes flour.
  2. 2Combine the ground oats and milk in a bowl, mixing well with a wire whisk to avoid lumps.
  3. 3Add the eggs to the mixture and integrate.
  4. 4Add a pinch of salt and integrate again.
  5. 5Let the dough rest at room temperature.
  6. 6Heat a non-stick frying pan, lightly grease it with oil using a napkin, and pour in a ladle of the batter, spreading it to cover the pan.
  7. 7Cook over low heat until the edges come off, flip, and cook until golden on the other side.

  • 100 g instant oats
  • 350 ml milk
  • 3 egg
  • 1 pinch salt

Tips

  • You can skip the grinding step if you use oatmeal.
  • If you don't have a food processor, you can blend all ingredients in a blender.
  • Make sure to cook the first side well before flipping so the crepe does not break.
  • Re-grease the pan with the oil-soaked napkin between crepes and stir the batter before each ladle.
  • These crepes can be filled with sweet or salty fillings like dulce de leche.
