Directions

  1. 1Slice 4 medium yellow onions into moon shapes.
  2. 2In a large pot over medium heat, add 2 tbsp of olive oil and 2 tbsp of butter.
  3. 3Add the sliced onions and salt to the pot.
  4. 4Caramelize and cook down the onions for about 40 minutes, stirring often.
  5. 5Add 3 cloves of chopped garlic to the caramelized onions.
  6. 6Add 1 tsp of flour to the pot.
  7. 7Pour in 1 cup of dry white wine.
  8. 8Add 1 tbsp of Worcestershire sauce.
  9. 9Add some thyme leaves from 3 sprigs of thyme.
  10. 10Pour in 6 cups of beef broth.
  11. 11Add salt and pepper to taste.
  12. 12Cover the pot and simmer for an additional 10 minutes.
  13. 13While the soup simmers, slice a baguette for toasting.
  14. 14Place the baguette slices on a baking tray.
  15. 15Drizzle olive oil over the baguette slices and toast them.
  16. 16Grate Gruyere cheese.
  17. 17Ladle the soup into oven-safe ramekins.
  18. 18Top each ramekin with two slices of toasted baguette.
  19. 19Add a generous amount of grated Gruyere cheese on top of the baguette slices.
  20. 20Pop the ramekins into the oven on a baking tray and broil for about 2 minutes, or until the cheese is nice and bubbly.
  21. 21Garnish with fresh thyme and cracked black pepper before serving.
