Smoky Chilli Bean Traybake with Sweet Potato and Feta

Directions

  1. 1Take the end off the sweet potato and split it in half.
  2. 2Put the sweet potato halves into a bowl.
  3. 3Season the sweet potatoes with salt and pepper.
  4. 4Sprinkle a little smoked paprika onto the sweet potatoes.
  5. 5Add a little olive oil to the sweet potatoes and toss them around.
  6. 6Add some oil to a pan on a gas stove.
  7. 7Cut 3 red onions into quarters and then into little chunks.
  8. 8Add the cut red onions to the pan.
  9. 9Add coriander stalks to the pan (keeping leaves aside in cold water).
  10. 10Add 4 garlic cloves to the pan.
  11. 11As the ingredients cook, add some smoked paprika to the pan.
  12. 12Let the paprika toast off for a bit.
  13. 13Add mixed beans to the pan.
  14. 14Add passata to the pan.
  15. 15Bring the mixture to a boil.
  16. 16Place the bean mixture in the oven for about 45 minutes at 180 degrees Celsius.
  17. 17Cook the sweet potatoes directly onto the bars of the oven.
  18. 18After 45 minutes, remove the traybake and sweet potatoes from the oven.
  19. 19Serve the traybake with sweet potatoes and a little bit of feta cheese.
  20. 20Reheat tortillas on a gas hob until they puff up.
  21. 21Load the dish with a little sour cream.
  22. 22Finish with a little shake of smoked paprika if desired.

Tips

  • You can use white onions, leeks, or spring onions instead of red onion.
  • For coriander, you can use basil, mint, or parsley as alternatives.
  • Do not waste coriander stalks; use them in the base.

  • Serve with bread or rice if tortillas are not preferred.
