Grate an onion and add it to the ground beef.

Add a healthy spoonful of yogurt to the mixture.

Generously season with garlic, paprika, chili, salt, and pepper.

Put on gloves and thoroughly mix in the ingredients.

Ball up the mixture and place it in the center of a parchment paper.

Cover with another piece of parchment paper and carefully spread it into a thin layer.

Roll the spread mixture almost into a large cigar shape.

Place the rolled kebab on a sheet tray with a little tomato and jalapeno.

Bake in the oven at 400 degrees Fahrenheit for about 15 minutes if you want it to stay juicy.

Return to the oven on a high broil for a couple of minutes after checking its thin sheet form.

Prepare tahini sauce by mixing 1/2 cup tahini, 1 juiced lemon, 1 grated garlic clove, 1/4 cup yogurt, water to thin, and salt to taste.

Prepare red sauce by mixing 1/4 cup oil, 1/4 cup tomato paste, 2 tbsp ketchup, 1 tsp cayenne pepper, 1/4 cup water, and salt to taste.

Pile the cooked meat onto pita bread.

Add tomato and jalapeno to the sandwich.

Add lots of arna sauce (tahini and red sauce) to the sandwich.

Drizzle with pomegranate molasses.

Add sumac if desired.

Brush with a nice brush of love (optional, metaphorical).

Tips
