1Brown the beef in a 12-inch cast iron skillet inside the Yoder Smokers YS640S pellet grill at 500 degrees with hickory pellets.
2Add in 1/2 cup each of diced yellow onion and poblano pepper.
3Add 1 tablespoon of Calamari Grill Roadhouse steak and beef rub.
4Mash the beef and vegetables.
5Add 1 teaspoon smoked paprika and 1.5 teaspoons of minced garlic.
6Blend the San Marzano tomatoes using an immersion blender.
7Add in 1/2 can of beans and the blended San Marzano tomatoes and 1/2 cup of Smokin' Ghost hot sauce.
8In a bowl, mix 1/4 cup of softened butter with 1 tablespoon of extra virgin olive oil, 1.5 teaspoons of White Mojo pizza seasoning, and 1/2 teaspoon of freshly grated garlic.
9Place the brioche hot dog buns in a cast iron baker.
10Cut a rectangle in the top of each bun.
11Spread the garlic butter mixture on top of the buns.
12Bake the buns in the wood-fired oven at 400 degrees for 4-5 minutes to set.
13Fill buns with mozzarella cheese, chili, and hot dogs.
14Top with cheddar cheese and bake for 8 more minutes.
15Garnish with fresh onion and pickled jalapeño.
