Cut the cabbage into wedges.

Drizzle oil over the cabbage wedges.

Season the cabbage wedges with salt and black pepper.

Cook the cabbage wedges in the oven until browned and charred.

Alternatively, pan-sear the cabbage wedges on the stove.

Remove the cooked cabbage from the pan and place it on a plate.

Drizzle oil over the mushrooms on a baking sheet.

Roast the mushrooms in the oven until golden brown.

Melt butter and garlic in a pan.

Add miso to the pan and mix.

Add water, soy sauce, and cream to the pan and mix to create the sauce.

Add the roasted mushrooms to the sauce and mix.

Pour the creamy miso mushrooms over the charred cabbage wedges.

Garnish with chives.

Tips
The humble cabbage is massively transformed when cooked until browned and charred.
Its natural sweetness comes through and the caramelized edges get so flavourful.
Use a mix of shimeji and black oyster mushrooms, or enoki, shiitake or cremini.
