Caramelized Onion Bacon Dip

Directions

  1. 1Preheat oven to 425F.
  2. 2Cut the top off the head of garlic, drizzle olive oil on cut side and sprinkle with salt and pepper.
  3. 3Put top back on garlic and wrap in foil.
  4. 4Set on a baking sheet and place in the oven for 30-45 mins until golden brown and tender.
  5. 5Place bacon in an even layer on a baking sheet, and place in the oven (on a separate rack from the garlic) for 15-20 mins until crispy and golden brown.
  6. 6Melt butter in a large saute pan over medium low heat.
  7. 7Add onion and stir.
  8. 8Deglaze pan with white wine and season with a pinch of salt and pepper.
  9. 9Continue to saute for about 30-45 mins stirring frequently.
  10. 10Add 2 TBS of water if the pan gets too dry.
  11. 11Unwrap garlic and let cool as you drain bacon on a paper towel and cut into small pieces.
  12. 12In a medium large bowl add sour cream, cream cheese and mayo.
  13. 13Whisk to combine.
  14. 14Squeeze out the tender roasted garlic cloves into the bowl and whisk again.
  15. 15Add the bacon, dill, chili flakes, paprika and a squeeze of fresh lemon juice.
  16. 16Stir again and taste to make sure it doesn’t need anymore salt.

  • 0.5 cup butter
  • 1 splash white wine
  • 1 head garlic
  • 1 TBS olive oil
  • 10 pieces bacon
  • 1 cup sour cream
  • 1 cup cream cheese, room temp
  • 0.5 cup mayo
  • 3 TBS fresh dill, finely chopped
  • 0.5 tsp chili flakes
  • 0.25 tsp smoked paprika
  • 0.5 of a lemon
  • Salt
  • pepper
  • 2 TBS water
