Directions
- 1Place a pan over medium heat.
- 2Add 3 tablespoons of butter to the pan.
- 3Add 3 tablespoons of flour to the melted butter.
- 4Stir the butter and flour together continuously until well combined and browned to make a roux.
- 5Add 2 cups of chicken broth to the roux.
- 6Add 1/2 tsp each of salt, pepper, oregano, and thyme, and 1 tsp each of paprika, onion powder, and garlic powder to the mixture.
- 7Stir well until the mixture is smooth and starts to thicken and bubble.
- 8Add two chicken breasts, sliced in half lengthwise and seasoned with salt, pepper, and garlic, to the gravy.
- 9Cover the chicken with gravy using a spoon.
- 10Cover the pan with a lid and cook over medium-low heat for 12 minutes, or until the chicken reaches an internal temperature of 165 degrees.
- 11Once cooked, shred the chicken using two forks.
- 12Serve the shredded chicken and gravy over mashed potatoes.

Tips
- For the chicken, season with salt, pepper, and garlic powder, but exact measurements are not used.
- If in a pinch, Bob Evans mashed potatoes from the fridge section at Walmart will do just fine.
