Rice paper dumplings

Directions

  1. 1Moisten the bench a little with water from a clean spray bottle.
  2. 2Lay out your rice paper.
  3. 3Spritz all over the rice paper pretty generously with water.
  4. 4Add the filling (e.g., prawn mixture with garlic, ginger, spring onions, white pepper, salt, sugar, GF soy sauce, sesame oil, GF oyster sauce, and corn starch).
  5. 5Fold the dumplings so there are a few layers of the paper on both sides.
  6. 6Spread the dumplings out in a large frying pan with some oil.
  7. 7Cook over low-medium heat until crispy and cooked through.
  8. 8Serve with a soy vinegar dipping sauce, a good drizzle of homemade chili oil, and fresh spring onions or herbs.

  • 300 g peeled, raw deveined prawns
  • 2 cloves garlic
  • 2 cm piece ginger
  • 2 small spring onions
  • 1 pinch white pepper
  • 0.25 tsp salt
  • 0.5 tsp sugar
  • 1 tsp GF soy sauce
  • 1 tsp sesame oil
  • 0.5 tsp GF oyster sauce
  • 1 tbsp corn starch
  • oil
  • water
  • soy vinegar dipping sauce
  • homemade chili oil
  • fresh spring onions
  • herbs

Tips

  • Moisten the bench and rice paper generously with a spray bottle of water to allow more time for folding.
  • Use any dumpling filling, ensuring it's not too wet to achieve a crispy exterior.
  • Microwave a small spoonful of the filling to taste and adjust seasoning before using.
