Banana Cheesecake Delight

Directions

  1. 1Pulse one box of Nilla Wafers in a food processor until fine.
  2. 2Add 1/4 cup of brown sugar to the pulsed Nilla Wafers.
  3. 3Add 1.5 sticks (12 tbsp) of melted butter to the mixture and pulse again.
  4. 4Press the crust mixture evenly into the bottom of a 13x9 dish using a spatula.
  5. 5Refrigerate the crust for 10 minutes.
  6. 6Spread the no-bake cheesecake filling evenly over the chilled crust.
  7. 7In a bowl, combine two 3.4 oz boxes of vanilla instant pudding mix with 3 cups of cold milk.
  8. 8Mix with an electric mixer until thickened.
  9. 9Optionally, add a few drops of rum extract and mix again.
  10. 10Slice 3-4 fresh bananas.
  11. 11Arrange the sliced bananas over the cheesecake layer.
  12. 12Pour the thickened pudding mixture over the bananas and gently spread it out evenly.
  13. 13Spread a container of Cool Whip (or homemade whipped cream) on top of the pudding layer.
  14. 14Refrigerate the dessert for at least 1 hour, or until set.
  15. 15Before serving, drizzle caramel over the top.
  16. 16Add more Nilla Wafers and sliced bananas on top for garnish.

Tips

  • You can find the no-bake cheesecake filling near the cream cheese section in Walmart.
  • Adding rum extract is optional.
