Pesto Tuna Bake

Directions

  1. 1Put on black gloves.
  2. 2Add tuna to a baking dish.
  3. 3Add low-fat Greek yogurt to the dish.
  4. 4Add red pesto with sundried tomatoes.
  5. 5Add eggs to the mixture, preferably without the shell.
  6. 6Add cherry tomatoes.
  7. 7Add chopped asparagus.
  8. 8Add plenty of spinach.
  9. 9Add spring onions.
  10. 10Add a tin of sweet corn.
  11. 11Add cooked pasta.
  12. 12Season it.
  13. 13Mix all ingredients together thoroughly.
  14. 14Add a good squeeze of lemon.
  15. 15Finish with some light mozzarella cheese.
  16. 16Add a little bit of Parmesan as well.
  17. 17Cover the dish in foil.
  18. 18Bake in the oven at 200°C or 390°F for 20 minutes with foil, then remove the foil and bake for another 10 minutes to get a crispy top.
  19. 19Serve and enjoy the most delicious pesto tuna bake.

Ingredients

  • 425 g tinned tuna in springwater (drained weight)
  • 47 g red pesto
  • 200 g light Greek yoghurt
  • 4 eggs
  • 400 g corn kernels
  • 200 g cherry tomatoes (halved)
  • 2 bunches asparagus (chopped)
  • 100 g baby spinach
  • 420 g tin sweet corn
  • 100 g spring onions (chopped)
  • 200 g Pulse Pasta (dry weight)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • lemon juice
  • 20 g parmesan cheese (grated)
  • 100 g light mozzarella (grated)
