1To a pound of ground chicken, add 1 egg, breadcrumbs, minced garlic and ginger, salt, black pepper, green onions, and the seasonings listed in the caption below (white pepper, cornstarch, red pepper flakes).
2Using an ice cream scooper, sear off your chicken meatballs for 2 to 3 minutes per side on medium-high heat with 1 tbsp avocado oil.
3Finish cooking the meatballs in the oven.
4For the honey garlic sauce, add 1 tbsp butter, 4 cloves minced garlic, 1 tsp freshly grated ginger, optional chili flakes, 2 tbsp honey, 1/4 cup soy sauce, and a cornstarch slurry (1/4 cup water + 2 tsp cornstarch) to thicken it.
5Add the meatballs back to the sauce.
6Let the meatballs simmer on low for 5 to 6 minutes or until fully coated.
7Serve over rice with a big squeeze of fresh lime juice, cilantro, green onions and sesame seeds.
