Easy Marinated Cheese Appetizer with Salami & Green Olives

Directions

  1. 1Cut cheese into bite-size cubes.
  2. 2Slice or roll the salami into small pieces.
  3. 3In a bowl or jar, whisk together olive oil, vinegar (or lemon juice), Italian seasoning, oregano, garlic, chili flakes, and black pepper to make the marinade.
  4. 4Add cheese, salami, and green olives to a large bowl or airtight container.
  5. 5Pour the marinade over everything and gently toss to coat.
  6. 6Cover and refrigerate for at least 30 minutes (best flavor after 2–4 hours).
  7. 7Let stand at room temperature for 10 minutes before serving.
  8. 8Garnish with fresh parsley if desired.

Ingredients

  • 12 oz cheese, cubed (cheddar, provolone, mozzarella, Monterey Jack, or a mix)
  • 4 oz salami, sliced and quartered or rolled
  • 0.75 cup green olives, pitted (Castelvetrano or Spanish olives work great)
  • 0.25 cup extra-virgin olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1 tsp dried Italian seasoning
  • 0.5 tsp dried oregano
  • 0.5 tsp garlic powder (or 1 small garlic clove, finely minced)
  • 0.25 tsp red chili flakes

Tips

  • Go light on the salt as cheese and olives are already salty.
  • Stir once or twice if marinating longer than 30 minutes.
  • Let stand at room temperature for 10 minutes before serving.
