1Prepare the syrup: In a pot, mix 2 cups of Greek sugar, water, juice of half a lemon, 1 cinnamon stick, 6 cloves and 1 tablespoon of Greek honey. Bring to a boil, then turn off the heat and let it cool down.
2Prepare the nut mix: In a machine, mix walnuts, pistachios and almonds until they are finely chopped. Add 1 teaspoon sugar, 1 teaspoon cloves and 1 tablespoon cinnamon. Mix well.
3Prepare the baking tray: Butter the bottom and sides of a baking tray.
4Assemble the baklava rolls: Lay a phyllo pastry sheet on the table. Add some butter on it. Spread a layer of the nut mix over the phyllo sheet. Lay another phyllo sheet on top and butter it.
5Roll the baklava: Using two sticks, tightly roll the phyllo sheets with the nut mix inside. Remove the sticks and place the rolls in the prepared baking tray.
6Cut the rolls: Use a knife to cut the baklava rolls in your desired portions.
7Brush with butter: Brush the baklava rolls with the remaining butter.
8Bake: Bake in the oven at 200°C for 20 minutes. Turn down the heat and bake for another 40 minutes.
9Add syrup: Once the baklava is cooked, pour the cooled syrup over the rolls. Let stand for a couple of hours before serving.
