Paneer Khurchan

Directions

  1. 1Slice the tomatoes, red bell pepper, green bell pepper, yellow bell pepper, and onions into thin strips. Chop some onions and tomatoes finely. Peel garlic and ginger.
  2. 2Put green chilies, ginger, and garlic into a blender and blend into a paste.
  3. 3In a bowl, add hung curd, mustard oil, besan, salt, black pepper powder, garam masala, kasuri methi, coriander powder, chaat masala, jeera powder, tikka masala, Kashmiri red chilli powder, and the ginger, garlic, and green chili paste. Mix well to combine.
  4. 4Marinate the paneer slices with the prepared mixture.
  5. 5Add the sliced bell peppers and onions to the remaining marination mixture and mix well.
  6. 6Heat oil on a tawa and roast the marinated paneer slices on medium to high flame until browned on both sides. Remove and cut into strips, then set aside.
  7. 7In the same tawa, roast the marinated bell peppers and onions until cooked. Remove and set aside with the paneer.
  8. 8Heat 2 tbsp oil on the tawa, add 1 tsp jeera and 1 bay leaf.
  9. 9Add the finely chopped onions and the ginger, garlic, and green chili mixture. Saute well until onions change color.
  10. 10Add the finely chopped tomatoes and spices (salt to taste, 1 tsp kasuri methi, 1 tbsp Kashmiri red chilli powder, 1 tbsp coriander powder, 0.5 tsp haldi, 1 tsp jeera powder, and 1 tsp black pepper powder).
  11. 11Cook well until oil starts to release, adding a little water if the masala starts to stick.
  12. 12Add the roasted paneer, bell peppers, and onions back to the tawa. Add some fresh coriander leaves, sliced tomatoes, sliced green chilies, and fresh cream.
  13. 13Mix well and cook for a few more minutes until everything is heated through and flavors are combined.
