Marry Me Chicken Noodle Soup

Directions

  1. 1Boil a pot of water and cook 1/2 lb ditalini pasta according to package instructions, strain and set aside.
  2. 2Heat 1 tbsp of oil from the sun-dried tomato jar in a Dutch oven or pot over high heat.
  3. 3Add 1 diced yellow onion and sauté for 2 minutes.
  4. 4Add 1/4 cup white wine, 3 chopped large carrots, 3 chopped celery stalks, and 1 small chopped parsnip.
  5. 5Add a pinch of salt and sauté for 5-8 minutes until vegetables are softened.
  6. 6Create a space in the pan and add 1 tbsp butter and 8 minced garlic cloves, and stir for 1-2 minutes.
  7. 7Add 6 tbsp tomato paste, mix together for another 1-2 minutes.
  8. 8Stir in 1/4 cup chopped sun-dried tomatoes, 6 tsp chicken bouillon, and 6 cups water.
  9. 9Add 1/2 tsp parsley, 1/2 tsp oregano, 1/2 tsp basil, 1/2 tsp salt, 1/2 tsp pepper, and 1/2 tsp red pepper flakes and bring to a boil.
  10. 10Reduce to a simmer, cover and let cook for 10 minutes.
  11. 11Add 3/4 cup light cream and stir in cooked pasta, 1.5 cups chopped chicken, 1/4 cup fresh chopped parsley, 1/4 cup fresh chopped basil, and 1/4 cup grated parmesan cheese.
  12. 12Stir all the ingredients until fully combined.
  13. 13Serve with a drizzle of olive oil and fresh parmesan.

  • 0.25 cup fresh chopped basil
  • 0.25 cup grated parmesan cheese
