Place 5 or 6 slices of bacon into a cold pan.

Set the heat to medium-high.

Cook until the bacon is crispy, allowing fat to render out slowly.

Remove the crispy bacon and place it on a paper towel-lined plate, leaving the bacon fat in the pan.

Reduce the heat to low.

Add 1 pound of prepared Brussels sprouts (ends cut, most cut in half, larger ones quartered) to the pan with bacon fat.

Cook the Brussels sprouts for about 20 minutes, or until desired doneness, leaving them uncovered for the last half of cooking.

Add Boursin cheese to the pan and let it melt into the Brussels sprouts.

Return the cooked bacon to the pan with the Brussels sprouts and cheese.

Tips
Start bacon in a cold pan to render fat evenly and prevent scorching.
Cut the ends off Brussels sprouts; cut most in half, bigger ones in quarters.
If the pan gets too dry or Brussels sprouts are darkening too quickly, add a splash of water and cover them.
No additional seasonings are usually needed due to the salty bacon and herbed cheese.
Cook Brussels sprouts uncovered for the last half of cooking.
Pull Boursin cheese out of the fridge ahead of time so it's not too cold.
