1Mix grounded beef, diced onion (almost a paste), a couple of tablespoons of quick yogurt, and a bunch of spices (salt, Gyros spices, cumin, chilli flakes, smoked paprika, garam masala) with a clean hand.
2Spread the meat mixture evenly on baking paper until it covers the entire paper.
3Roll the meat mixture.
4Cut one onion into big pieces, three green peppers, and one garlic.
5Season the vegetables with a little bit of salt and olive oil.
6Put the meat and vegetables in the oven at 180 degrees Celsius for 15 minutes.
7Prepare the sauce by mixing tahini, sesame oil, the juice of one lemon, cold water, salt, the rest of the yogurt, maple syrup, fresh coriander, freshly grounded pepper, and sriracha.
8Keep the sauce in the fridge until needed.
9After 15 minutes, remove the meat from the oven and drain any excess water.
10Return the meat to the oven for another 15-20 minutes.
11Break the cooked meat into smaller pieces.
12Add a splash of olive oil to the meat for extra crunch.
13Return the meat to the oven for a final 5 minutes at 200 degrees Celsius.
14Serve the kebab with a base of lettuce, a good amount of roasted garlic, roasted pepper, roasted onion, tomato, and a little more sauce and fresh coriander.
