1Wash and cut the mushrooms into small pieces or slices.
2Boil the mushrooms with 0.5 tsp salt and 0.25 tsp turmeric.
3Make a smooth paste with 1 medium tomato, 1 onion, 1-2 green chillies, 4-5 garlic cloves, 1 inch ginger, and coriander leaves.
4Add 10-15 cashews and 1 tbsp melon seeds to the paste and blend until smooth.
5Heat 2 tbsp clarified butter or cooking oil in a pan and add the smooth paste.
6Add 1 tsp cumin, 2 bay leaves, 2-3 green cardamoms, 1 piece of mace, 1 black cardamom, and 2-3 dry red chillies. Stir and fry until the oil separates.
7Add 0.5 tsp salt, 0.25 tsp turmeric, 0.5 tsp Kashmiri red chilli, and 1 tsp coriander powder. Mix well.
8Add the boiled mushrooms and mix well.
9Cover and cook for 10 minutes on low flame.
10Add 2 tbsp fresh cream and mix.
11Garnish with coriander leaves and serve with paratha or naan.
