Glutinous Rice Siu Mai

Directions

  1. 1Dice 3 garlic cloves and set aside.
  2. 2Dice half an onion and set aside.
  3. 3Soak 4 mushrooms in water for 2 hours, then dice and set aside.
  4. 4Remove the skin and bones from 2 chicken drumsticks, dice into cubes.
  5. 5Add 1/2tsp of salt and marinate for 2 hours in the fridge.
  6. 6Wash 150g glutinous rice twice and drain, add 130ml water and soak for 60 minutes.
  7. 7Add 60g GF plain flour, 40g GF self raising flour and 75ml boiling water, then knead until smooth. Cover and let cool to room temperature.
  8. 8Steam soaked glutinous rice with some olive oil for 20 minutes.
  9. 9Turn on medium heat, add olive oil to the pan, then add the marinated chicken and stir fry until slightly browned.
  10. 10Add garlic, stir-fry until fragrant, then add onions and mushrooms, stir-fry until fragrant.
  11. 11Add 1/2tsp salt, 1tbsp GF soy sauce, 1tsp coriander powder, 1/2tsp pepper powder and 1/2tsp GF mushroom seasoning.
  12. 12Add 1tbsp sesame oil, turn to low heat, then add cooked glutinous rice and 1 1/2tbsp GF sweet soy sauce. Turn off the heat and let cool.
  13. 13Divide into 50g small balls.
  14. 14Knead the dough for a while and place it on a surface covered in flour. Divide into 7 small pieces and cover to keep from drying out.
  15. 15Roll into a round thin circle, then put the filling in the centre and wrap it into a siu mai shape, then place on baking paper.
  16. 16Put in a steamer and steam for 10 minutes.
