Auntie Anne Pretzel Bites

Directions

  1. 1Warm 2 cups of milk in the microwave until warm, but not hot.
  2. 2Add 2 packets of yeast to the warm milk.
  3. 3Mix lightly and let it sit for 3 minutes.
  4. 4Add 6 tablespoons of brown sugar to the milk and yeast mixture.
  5. 5Add 4 tablespoons of melted butter to the mixture.
  6. 6Mix the ingredients together.
  7. 7Add 4 1/2 cups of flour and 2 teaspoons of salt to the mixture.
  8. 8Slightly mix the flour into the wet ingredients.
  9. 9Put the dough in a mixer with a dough hook attachment and mix for 10 minutes, or knead by hand for 10 minutes.
  10. 10Add a little bit more flour and knead the dough if needed to reach the desired consistency.
  11. 11Place the dough in a warm spot for an hour to let it rise, ensuring the bowl is sprayed.
  12. 12Roll out pieces of dough into long ropes and shape them into pretzels.
  13. 13Cut the dough ropes into small pieces to make pretzel bites.
  14. 14Boil a couple cups of water and add 1/3 cup of baking soda.
  15. 15Dip each pretzel or pretzel bite into the boiling water mixture, giving it a quick bath, and then immediately remove it.
  16. 16Place the dipped pretzels and pretzel bites back onto a lined baking sheet.
  17. 17Paint a little melted butter on top of each pretzel and pretzel bite.
  18. 18Sprinkle coarse salt on top of the buttered pretzels and pretzel bites.
  19. 19Bake the pretzels and bites at 450 degrees Fahrenheit for around 8 minutes, checking on them periodically.
  20. 20To make the cheese sauce, start by melting 1 tablespoon of butter in a pan.
  21. 21Add 1 tablespoon of flour to the melted butter and whisk until combined.
  22. 22Add 1 cup of whole milk to the mixture and whisk until smooth.
  23. 23Add 1 cup of shredded cheddar cheese and 1/2 teaspoon of salt to the sauce.
  24. 24Mix all ingredients together until bubbly, then remove from heat.
  25. 25Serve the pretzel bites with the cheese sauce.

Tips
