  1. 1Prepare the crust by mixing cold butter, sugar, flour, egg yolk, half a packet of baking powder, and vanilla sugar. Knead until combined.
  2. 2Press the dough into a greased baking sheet or pan, and chill for 30 minutes.
  3. 3Preheat oven to 200°C (fan-forced).
  4. 4Prepare the apple filling using a jar of applesauce and sliced apples.
  5. 5Prepare the cheesecake filling by separating the egg whites from yolks. Beat egg whites with 80g of sugar until stiff.
  6. 6In a separate bowl, beat soft butter, egg yolks, 180g sugar, curd cheese (Topfen or Magerquark), a tablespoon of vanilla sugar, a packet of vanilla pudding powder, lemon zest, and half a lemon juice until combined.
  7. 7Gently fold in the beaten egg whites.
  8. 8Remove the chilled crust from the refrigerator.
  9. 9Spread the applesauce evenly over the crust, then arrange apple slices on top.
  10. 10Pour the cheesecake mixture over the apples, smooth the top, and bake on the second rack from the bottom for 45-50 minutes.
  11. 11After about 20-25 minutes, cover the cake with parchment paper to prevent it from browning too much.
