Tennessee Onion Casserole

Directions

  1. 1Peel the sweet onions.
  2. 2Slice the peeled onions thinly, about a quarter of an inch thick, using a mandoline.
  3. 3Toss all the sliced onion rings together in a bowl to break them up.
  4. 4In a small bowl, combine salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne, and fresh thyme leaves.
  5. 5Mix the spice blend together.
  6. 6Drizzle olive oil over the sliced onions.
  7. 7Toss the onions with olive oil to coat them evenly.
  8. 8Sprinkle about half of the spice mixture over the oiled onions.
  9. 9Toss the onions with your hands to distribute the spices evenly.
  10. 10Add the remaining half of the spice mixture to the onions.
  11. 11Toss the onions again to ensure all spices are distributed.
  12. 12Grease a 13x9 baking dish.
  13. 13Place the first layer of seasoned onions in the baking dish.
  14. 14Sprinkle 2 ounces of freshly grated Tillamook mild cheddar cheese over the first onion layer.
  15. 15Sprinkle 2 ounces of freshly grated Gruyere cheese over the cheddar cheese layer.
  16. 16Add another layer of seasoned onions on top of the cheese.
  17. 17Sprinkle another 2 ounces of Tillamook mild cheddar cheese over the second onion layer.
  18. 18Sprinkle another 2 ounces of Gruyere cheese over the cheddar cheese.
  19. 19Sprinkle about a half cup of freshly grated Pecorino Romano cheese on top.
  20. 20Dot the top of the casserole with 3 tablespoons of butter, cut into small pieces.
  21. 21Cover the baking dish tightly with foil.
  22. 22Bake in a preheated oven at 350°F (175°C) for 45 minutes.
  23. 23Remove the foil from the casserole.
  24. 24Return the casserole to the oven for another 30 minutes, uncovered.
  25. 25Serve and enjoy.
