1Get your boneless chicken thighs, season with salt, Italian herbs, chilli flakes, parsley, garlic and onion powder, paprika, and olive oil. Mix until the color changes.
2Slice your potatoes into thick chunks and drop into a pot of cold water. Boil for 12-14 minutes until fork tender.
3Steam for 5 minutes before mashing until smooth and fluffy.
4Add light butter, warm milk, salt, and garlic powder. Mix until completely smooth and fluffy.
5Lay down your seasoned chicken thighs on a sheet pan and oven bake or air fry for 22-25 minutes until golden and juicy.
6For the creamy sauce, add light butter to a pan with the seasoning mix. Let it toast before adding milk, light cream cheese, parmesan, and a handful of spinach.
7Stir until thick and creamy.
