Jalapeño Popper Smash Burger

Directions

  1. 1Cook diced bacon over medium-high heat for 10-15 minutes until crispy, stirring constantly to ensure even cooking and fat rendering.
  2. 2Remove cooked bacon from the pan, drain, and set aside.
  3. 3Remove most of the bacon grease from the pan, leaving some drippings.
  4. 4Add diced white onion to the pan and sauté for about 3 minutes.
  5. 5Add black coffee (espresso), apple cider vinegar, brown sugar, and fresh raspberries to the pan with the onions.
  6. 6Stir to combine the ingredients until the berries start to break down.
  7. 7Add salt and pepper to taste.
  8. 8Return the cooked bacon to the pan with the sauce.
  9. 9Stir everything together and drop the heat to medium-low, letting it simmer for 45-50 minutes until the bacon jam has thickened.
  10. 10Heat a skillet or griddle over medium-high heat.
  11. 11Place 4 oz beef balls onto the hot griddle.
  12. 12Place thinly sliced jalapeños on top of the beef balls.
  13. 13Smash the beef balls down into patties with the jalapeños.
  14. 14Season the patties with Texas Jalapeño Salt.
  15. 15Carefully flip the burgers after about 90 seconds, scraping up the edges to keep the crust intact.
  16. 16Top the flipped patties with Havarti cheese.
  17. 17Let the cheese melt for about 30 seconds.
  18. 18Remove the burgers from the griddle.
  19. 19Take a pretzel bun and spread a generous amount of whipped cream cheese on the bottom half.
  20. 20Place two of the jalapeño patties on top of the cream cheese on the bottom bun.
  21. 21Spread a good amount of bacon jam onto the top half of the pretzel bun.
  22. 22Place the top bun onto the burger.

  • Texas Jalapeño Salt

  • pretzel buns
  • whipped cream cheese
  • bacon jam

Tips

  • When cooking bacon, make sure to keep stirring everything so it cooks evenly and the fat renders fully.
  • When flipping the burgers, carefully scrape up the edges to keep the beautiful crust intact.
  • Use 75/25 ground beef for smash burgers to keep them juicy and get a good sear.
  • If a few jalapeños fall off after smashing, place them back on top right after.
  • You can use any kind of black coffee, but espresso is recommended.
  • Don't worry if a few fall off, we're going to place them on top right after.
  • Even though I normally use American cheese, today I'm going to use Havarti.
  • When assembling the burger, use a generous amount of whipped cream cheese on the bottom bun.
  • Spread a good amount of bacon jam onto the top bun before placing it on the burger.
  • This is my favorite burger hands down. Definitely give it a try!
