Shrimp Ceviche

Directions

  1. 1Juice the oranges, lemons, and limes into a pot.
  2. 2Add a generous amount of Dan-O's Chili Lime seasoning to the citrus juice.
  3. 3Bring the citrus juice mixture to a boil.
  4. 4Peel and devein the shrimp.
  5. 5Dice the shrimp into small pieces.
  6. 6Add the diced shrimp to the boiling citrus juice mixture.
  7. 7Turn off the heat.
  8. 8Stir the shrimp in the hot liquid to ensure it's fully submerged and cooked.
  9. 9Transfer the shrimp and liquid to a bowl, ensuring the shrimp remains submerged.
  10. 10Place the bowl of shrimp in the freezer for about 30 minutes to cool.
  11. 11Cut the mangoes by slicing off the sides, then using a pint glass to separate the flesh from the peel.
  12. 12Dice the mango flesh into small pieces.
  13. 13Add the diced mango to a large mixing bowl.
  14. 14Dice the Roma tomatoes into small pieces.
  15. 15Add the diced tomatoes to the mixing bowl.
  16. 16Dice the jalape o os into small pieces.
  17. 17Add the diced jalape o os to the mixing bowl.
  18. 18Chop the cilantro, separating the leaves from the stems and finely dicing the stems.
  19. 19Add the chopped cilantro leaves and stems to the mixing bowl.
  20. 20Cut the red onion, remove the outer layer, slice it, and dice it into small pieces.
  21. 21Add the diced red onion to the mixing bowl.
  22. 22Remove the cooled shrimp from the freezer and add it to the mixing bowl with the vegetables.
  23. 23Mix all the ingredients together thoroughly.
  24. 24Serve the shrimp ceviche with tortilla chips.
