13Add the remaining half of the seasoning blend to the pot and bloom the spices in the remaining fat.
14Add all the minced and diced vegetables (red onion, bell pepper, jalapeño, chili pepper, garlic) to the pot and cook until soft.
15Stir in a few scoops of tomato paste.
16Add one can of fire-roasted diced tomatoes (or crushed tomatoes) to the pot.
17Deglaze the pot with one can of Guinness beer, scraping up any browned bits from the bottom.
18Add one can of pinto beans and one can of kidney beans to the pot.
19Return the cooked bacon to the pot.
20Return the cooked ground beef to the pot.
21Add the rest of the seasonings.
22Stir in one cup of beef stock.
23Add a spoonful of cocoa powder to the chili.
24Let the chili simmer on low heat for 20-30 minutes.
