Directions

  1. 1Add a can of drained black beans and a can of sweet corn to your crockpot.
  2. 2Add a can of Rotel tomatoes.
  3. 3Add a tablespoon of chili powder.
  4. 4Add a teaspoon of cumin.
  5. 5Add a teaspoon of onion powder.
  6. 6Add one ranch packet.
  7. 7Stir all the ingredients in the crockpot thoroughly.
  8. 8Nestle two large chicken breasts into the mixture, pressing them in gently but firmly.
  9. 9Sprinkle about half a packet of taco seasoning over the chicken breasts.
  10. 10Cut a brick of cream cheese in half and place the halves on top of the ingredients.
  11. 11Place the lid on the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  12. 12Remove the cooked chicken from the crockpot and place it in a bowl.
  13. 13Shred the chicken using a hand mixer or preferred method.
  14. 14Return the shredded chicken to the crockpot.
  15. 15Mix all ingredients well, ensuring the cream cheese is fully incorporated.
  16. 16Serve the chili in a bowl.
