Directions

  1. 1Brown 1 lb of ground beef with a chopped onion in a skillet over medium high heat.
  2. 2Once browned, drain grease and season with salt, pepper, cumin, dried cilantro, chili powder, and cayenne.
  3. 3Add 1 can of drained corn, 1 can of Rotel (not drained), 1 cup sour cream, and about 1 cup of shredded Colby Jack cheese.
  4. 4Stir everything together well.
  5. 5Top with one more cup of shredded cheese.
  6. 6Top with tater tots or crispy crowns.
  7. 7Bake at 400 degrees for about 35 minutes or until the tater tots are cooked to your liking.
  8. 8Top with Buffalo Wild Wing’s Southwest Ranch.
