Directions
- 1Brown the ground hamburger.
- 2Soften two sweet onions and two peppers.
- 3Season with two packets of taco seasoning and two packets of ranch seasoning.
- 4Add two cans of drained black beans.
- 5Add two cans of Rotel.
- 6Add two cans of whole kernel corn.
- 7Add one carton of chicken broth (or beef broth for a darker soup).
- 8Bring to a boil and simmer for 30 minutes.
- 9Add cream cheese cut into chunks.
- 10Stir and let melt.
- 11Taste test and add Ortega for more flavor.
- 12Top with shredded cheddar cheese and sour cream.
