Directions

  1. 1Cut the chicken into thin strips.

  3. 3Cook the chicken in small batches in a very hot skillet until nice and golden brown.
  4. 4For the cheese sauce, melt together a can of evaporated milk, a pound of white American cheese, 8 oz of pepper jack cheese, and some chopped jalapenos, keeping the heat low and slow and stirring constantly until smooth.
  5. 5Divide the cooked chicken into six containers.
  6. 6Add a base of homemade Spanish rice to each container.
  7. 7Finish each meal prep with a hefty drizzle of the rich cheesy sauce.

Tips
