Cut the chicken into thin slices.

Marinate the chicken with soy sauce, cornstarch, sugar, and a bit of cooking oil.

Mix the marinade well and set it aside for 15 minutes.

Slice the onions and mushroom.

Finely chop ginger and two to three garlic cloves.

Cut spring onions into two-inch pieces.

Slice the red chilies (optional).

Prepare the sauce by mixing regular soy sauce, dark soy sauce, oyster sauce, water, sugar, and a bit of cornstarch until dissolved.

Drizzle oil in a pan over medium-high heat and stir fry the onions first.

Add mushroom and cook for one to two minutes, then set them aside.

In the same pan, drizzle more oil and add the marinated chicken slices.

Let the chicken sear at the bottom of the pan for one to two minutes.

Add minced garlic and ginger.

Stir everything well and cook until the chicken is 80% done.

Pour the sauce into the pan.

Add the fried mushroom and onion back to the pan and combine everything.

Finish with chili slices and spring onions.

Drizzle a bit of sesame oil and make a final quick toss.

1 tbsp Soy sauce regular soy sauce or light soy
1 tbsp Cornstarch or potato starch
2 tsp Cooking oil vegetable or sunflower oil
1 tsp Brown sugar or white sugar
3 tbsp Oyster sauce
1 tbsp Regular soy sauce
2 tsp Sugar
2 tbsp Water
0.5 tsp Cornstarch
1 tsp Dark soy sauce
