In a medium bowl, toss chicken cubes with paprika, garlic powder, salt, black pepper, and cornstarch until each piece is evenly coated.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add the seasoned chicken and cook for 5–7 minutes, or until browned and cooked through. Remove and set aside.

In the same pan, melt butter and pour in the beaten eggs. Stir gently until just set, then move them to one side of the pan.

Add chilled rice and the peas and carrots. Stir-fry for 3–4 minutes, breaking up any clumps and mixing everything together.

Return the cooked chicken to the pan. Pour in soy sauce, sesame oil, and half of the Bang Bang sauce. Stir well so the flavors coat every bite.

Drizzle the remaining Bang Bang sauce on top, then sprinkle with chopped green onions and sesame seeds for a little crunch and color.

Spoon into bowls and serve hot.

2 tablespoons cornstarch
2 tablespoons soy sauce
2 large eggs, lightly beaten
3 cups cooked rice, chilled
1 cup frozen peas and carrots, thawed
2 green onions, chopped
3 tablespoons Bang Bang sauce (mayonnaise, sweet chili sauce, and a touch of sriracha mixed together)
1 tablespoon sesame oil
1 tablespoon butter
sesame seeds
extra green onions
