Bang Bang Chicken Fried Rice

Directions

  1. 1In a medium bowl, toss chicken cubes with paprika, garlic powder, salt, black pepper, and cornstarch until each piece is evenly coated.
  2. 2Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. 3Add the seasoned chicken and cook for 5–7 minutes, or until browned and cooked through. Remove and set aside.
  4. 4In the same pan, melt butter and pour in the beaten eggs. Stir gently until just set, then move them to one side of the pan.
  5. 5Add chilled rice and the peas and carrots. Stir-fry for 3–4 minutes, breaking up any clumps and mixing everything together.
  6. 6Return the cooked chicken to the pan. Pour in soy sauce, sesame oil, and half of the Bang Bang sauce. Stir well so the flavors coat every bite.
  7. 7Drizzle the remaining Bang Bang sauce on top, then sprinkle with chopped green onions and sesame seeds for a little crunch and color.
  8. 8Spoon into bowls and serve hot.
