Beef and Broccoli

Directions

  1. 1Slice the eye of round super thin against the grain.
  2. 2Marinate the sliced beef with baking soda, corn starch, Chinese light soy sauce, oyster sauce, a little salt, and a splash of beef broth.
  3. 3Mix completely and let marinate on the counter for about 20 minutes.
  4. 4Prep the broccoli, making sure not to leave any pieces too big.
  5. 5Thinly slice some green onions.
  6. 6Prepare the sauce by combining beef bone broth, Chinese light soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, a little bit of sesame oil, grated garlic, grated ginger, brown sugar, and a little bit of white pepper.
  7. 7Blanch the broccoli until it's a nice bright green after about 45 seconds, then remove.
  8. 8Dump the water from the blanching.
  9. 9Add a generous amount of food loop and shallow fry the meat in batches if needed to avoid overcrowding the pan.
  10. 10Pour the sauce into an empty wok.
  11. 11Once the sauce starts to simmer, drizzle in a little bit of corn starch slurry.
  12. 12Once the sauce has thickened and is nice and glossy, add back in the meat and the broccoli.
