Place the chicken pieces in a mixing bowl.

Season the chicken with a touch of salt, pepper, fresh turmeric, cumin, ground coriander, cayenne pepper, and garam masala.

Add three tablespoons of yogurt to the chicken.

Add a little bit of oil to the chicken mixture.

Mix everything thoroughly until the chicken is well coated.

Heat oil in a pan.

Add sliced red onion to the pan and start caramelizing it.

Add cardamom seeds and cloves to the caramelizing onions.

Slice ginger, chili, and garlic.

Add the sliced ginger, chili, and garlic to the pan with the onions.

Add butter to the onion mixture.

Chop fresh cilantro, using the stalks for the sauce and tops for garnish.

Add the cilantro stalks into the pan with the vegetables and spices.

Add garam masala, turmeric, cumin, and cayenne pepper to the pan.

Toast the spices and vegetables in the pan.

Add another touch of butter to the mixture in the pan.

Start cooking the marinated chicken in a separate pan.

Once the vegetables and spices are caramelized, add tomato sauce to them.

As the sauce starts to boil, add double cream.

Stir the cream into the sauce until it's well combined and has a rich color.

Add a touch of lemon juice to the sauce.

Transfer the sauce mixture into a blender.

Blend the sauce slowly, as it is hot.

Pass the blended sauce through a sieve to ensure it's smooth.

Pour the cooked chicken into the smooth sauce.

Add a couple of knobs of butter to the chicken and sauce mixture.

Grate lemon zest over the dish.

Add fresh cilantro at the end.

Serve the butter chicken in a bowl.
