1Start by adding some shredded chicken to a mixing bowl.
2Add some taco seasoning, sour cream, green chilies and shredded cheese to your liking.
3Mix it until everything is combined.
4Set the mixture to the side.
5Add some cubed queso Velveeta to a hot saucepan.
6Pour in one can of undrained Ro-Tel.
7Heat it up until everything is nice and creamy.
8Start rolling up your enchiladas using flour tortillas by adding a little bit of the chicken mixture to the center, spreading it out, and then rolling it just like a burrito.
9Throw the enchiladas into a casserole dish.
10Top it with as much or as little of that queso sauce as you like.
11Pop it in an oven preheated to 350 degrees for about 20 to 25 minutes until it's warm.
