Preheat oven to 425F and line a half baking sheet with parchment.

Peel the sweet potatoes.

Rinse the peeled sweet potatoes under water.

Dry the sweet potatoes with a paper towel.

Slice the sweet potatoes into rounds, then dice them into approximately 1/4 inch cubes.

Place the diced sweet potatoes onto the lined baking sheet and lightly spray with cooking spray.

Season the sweet potatoes with salt, pepper, and a little cinnamon.

Bake the sweet potatoes in the preheated oven.

Heat a frying pan on medium-high heat, add the ground beef, and cook, breaking it apart into small pieces until fully cooked (about 5 minutes).

Drain any excess liquid from the cooked ground beef.

Add tomato paste, taco seasoning, and a splash of water to the ground beef.

Cook for 1-2 more minutes, stirring everything together, then remove from heat.

Halfway through baking (around 15 minutes into the 30-minute bake), flip the sweet potatoes and season them again with salt.
