Chicken fajita rice

Directions
- 1Add extra virgin olive oil to a pan.
- 2Add chopped red onion to the pan.
- 3Add chopped red bell pepper to the pan.
- 4Add chopped courgette to the pan.
- 5Add chopped tomatoes to the pan.
- 6Add Old El Paso roasted tomato and pepper fajita seasoning mix.
- 7Add tomato purée.
- 8Add water.
- 9Add chicken mini fillets, paprika, garlic granules, onion granules, and pepper.
- 10Add cooked white rice to the pan.
- 11Mix all ingredients together in the pan.
- 12Sprinkle grated cheddar and mozzarella cheese mix over the rice.
- 13Drizzle mayonnaise on top of the cheese.
- 14Drizzle sriracha sauce on top of the cheese.
- 15Garnish with chopped chives.

- 400 g chicken mini fillets
- 1 tsp paprika
- 1 tsp garlic granules
- 0.5 tsp onion granules
- to taste pepper
- 0.5 tbsp extra virgin olive oil
- 320 g cooked white rice
- 1 chopped red onion
- 0.5 chopped red bell pepper
- 1 chopped medium courgette
- 2 peeled and chopped tomatoes
- 25 g Old El Paso roasted tomato and pepper fajita seasoning mix
- 1.5 tbsp tomato purée
- 60 ml water
- 60 g grated cheddar and mozzarella cheese mix
- 1 tbsp chopped chives
- 0.5 tbsp mayonnaise
- 1 tbsp sriracha sauce
