Crispy Shredded Beef

Directions

  1. 1Slice up a carrot into thin strips. You could also use red bell pepper for this, but the creator likes the bite of a carrot.
  2. 2Mince a few cloves of garlic.
  3. 3Slice the top round into really thin strips, about ", against the grain.
  4. 4Place the sliced beef into a big bowl.
  5. 5Tenderize the beef with a little baking soda.
  6. 6Season it with soy sauce, Shaoxing wine or mirin, a little bit of sesame oil, one egg white, and a little bit of white pepper.
  7. 7Give it a good mix until everything is evenly coated.
  8. 8Set it aside and let it marinate for 15 minutes.
  9. 9In a small bowl, add soy sauce, dark soy sauce for color, rice vinegar, ketchup, honey, crushed red peppers to make it a little spicy, and a little cornstarch.
  10. 10Give the sauce a good mix until smooth.
  11. 11Coat the marinated beef in some plain cornstarch, making sure there's a good coating on it so it gets nice and crispy.
  12. 12Shake off any excess cornstarch.
  13. 13Heat oil in a wok or pan to 375°F.
  14. 14Add the beef into the fryer in batches.
  15. 15Fry them for about 3 to 4 minutes or until they get golden and crispy.
  16. 16Once it looks something like this, strain it.
  17. 17Repeat for the next batch.
  18. 18In a wok, heat 1 tbsp of oil.
  19. 19Add garlic and give it a quick sauté for 30 seconds until fragrant.
  20. 20Pour in the sauce and let it boil and thicken for about 1 minute on medium-high heat.
  21. 21Add the sliced carrots and stir-fry for 1 minute.
  22. 22Add the fried beef and give it a really good toss on medium heat.
  23. 23Once everything is evenly coated, it's ready to eat. Serve with rice or noodles and enjoy!

  • 1 tbsp Shaoxing wine or mirin
  • 1 tsp sesame oil
  • 0.125 tsp white pepper, or black pepper
  • 1 egg white
  • 1 cup cornstarch, for coating
  • 3 cloves garlic, finely minced
  • 1 medium carrot, thin matchstick
  • 3 cups neutral oil for frying
  • 2 tbsp soy sauce
  • 1.5 tbsp dark soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp ketchup
  • 3 tbsp honey
  • 1 tsp crushed red pepper or to taste
  • 0.5 tbsp cornstarch
  • baking soda
  • 1 tbsp oil

Tips

  • If you don't have dark soy sauce, do not substitute it for regular soy sauce as it will be too salty.
  • If you don't like ketchup, this recipe is not for you.
