Cut two potatoes in half lengthwise.

Cut a crosshatch pattern into all the potato halves.

Brush oil (avocado or olive) onto both sides of the potato halves.

Season both sides of the potatoes with salt, pepper, and ranch seasoning (or ranch cheesening).

Place four tablespoons of butter (or one tablespoon per potato half) on a sheet pan.

Add shredded Parmesan cheese on top of the butter, spreading it out a little to make piles.

Place the potato halves face down on top of each pile of butter and Parmesan.

Bake in the oven at 450 degrees for about 30 minutes.

Let the potatoes cool off for a minute on the baking sheet.

Add toppings: sour cream, fresh grated cheddar cheese, fresh cooked bacon crumbles, and green onions.

Tips
