Loaded Cracked Baked Potato

Directions

  1. 1Cut two potatoes in half lengthwise.
  2. 2Cut a crosshatch pattern into all the potato halves.
  3. 3Brush oil (avocado or olive) onto both sides of the potato halves.
  4. 4Season both sides of the potatoes with salt, pepper, and ranch seasoning (or ranch cheesening).
  5. 5Place four tablespoons of butter (or one tablespoon per potato half) on a sheet pan.
  6. 6Add shredded Parmesan cheese on top of the butter, spreading it out a little to make piles.
  7. 7Place the potato halves face down on top of each pile of butter and Parmesan.
  8. 8Bake in the oven at 450 degrees for about 30 minutes.
  9. 9Let the potatoes cool off for a minute on the baking sheet.
  10. 10Add toppings: sour cream, fresh grated cheddar cheese, fresh cooked bacon crumbles, and green onions.
