Creamy Mushroom Meatballs

Directions

  1. 1Preheat the oven to 400F convection (or 425F regular bake).
  2. 2Drizzle olive oil onto a parchment lined baking sheet.
  3. 3Combine the panko and milk in a bowl and let sit until absorbed.
  4. 4In a medium bowl, add the ground chicken, garlic, parsley, parmesan, egg, soaked panko, salt, and pepper.
  5. 5Mix until combined.
  6. 6Form slightly heaping 1 Tbsp meatballs and place on the baking sheet, rolling in the oil as you go.
  7. 7Bake for 12-15 mins, until the internal temp reaches 165F and bottoms are browned.
  8. 8Broil 2-3 mins for extra color if desired.
  9. 9While the meatballs bake, make the sauce.
  10. 10Melt butter in a large skillet over medium heat.
  11. 11Add the mushrooms, salt, and pepper and cook, stirring occasionally, until golden and tender, 3-5 mins.
  12. 12Add the shallot and cook 1 min.
  13. 13Then add garlic and flour and cook 1 min more, until fragrant.
  14. 14Pour in chicken stock and add the cream cheese.
  15. 15Stir, scraping up any bits, and bring to a simmer.
  16. 16Cook 3-4 mins, until smooth and slightly thickened.
  17. 17Stir in balsamic vinegar and thyme.
  18. 18Taste and add salt and pepper if desired.
  19. 19Add the meatballs to the sauce and toss to coat.
  20. 20Simmer 1 min.
  21. 21Serve over mashed potatoes.
  22. 22Top with parsley if desired and enjoy!

  • 1 Shallot (3 oz.), finely chopped
  • 3 Cloves Garlic, finely chopped
  • 1 tsp Flour
  • 1 Cup Chicken Stock
  • 0.25 Cup Cream Cheese (2 oz.), cut into small pieces
  • 2 tsp Balsamic Vinegar
  • 1 tsp Fresh Thyme Leaves, finely chopped
  • Mashed Potatoes
  • Fresh Parsley

Tips
